Tomato, Pesto, Mozzarella Stacks

This is a simple appetizer that is sure to impress with it’s colorful beauty. Juicy heirlooms and fresh basil is a winning combination – here’s an idea for a subtle twist on the typical Caprese.
Serves 4
Ingredients
- 3 large ripe heirloom tomatoes, sliced in rounds
- 4 oz fresh mozzarella, sliced in rounds
- 1 bunch fresh basil
- 1/4 cup raw pine nuts
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- salt & pepper
Preparation
- In a food processor, combine basil, pine nuts and olive oil and pulse until well blended.
- Place first layer of tomatoes on serving dish and top with mozzarella slices.
- Drizzle pesto sauce over tomatoes and mozzarella and then close the stack with another slice of tomato.
- Drizzle with balsamic and sprinkle with salt & pepper and serve.
