Roasted Cauliflower & Capers


This is such a tasty veggie side that you can easily consume several heads of cauliflower in just one sitting. Goes well with virtually any main and/or some fresh greens. Enjoy!


Serves 2

 


Ingredients

  • 3 heads caulflower, divided into 1 inch sections
  • 1/2 cup capers, drained
  • ~1 cup olive oil
  • salt & pepper


Preparation

  1. Spread the cauliflower over a couple of baking sheets and drizzle with olive oil and sprinkle with salt & pepper.
  2. Bake in a 325 degree oven for about 15 minutes.
  3. Stir and add capers, then pop back in for another 30 minutes, stirring once after 15.
  4. Remove from oven and serve warm
