Roasted Cauliflower & Capers

This is such a tasty veggie side that you can easily consume several heads of cauliflower in just one sitting. Goes well with virtually any main and/or some fresh greens. Enjoy!
Serves 2
Ingredients
- 3 heads caulflower, divided into 1 inch sections
- 1/2 cup capers, drained
- ~1 cup olive oil
- salt & pepper
Preparation
- Spread the cauliflower over a couple of baking sheets and drizzle with olive oil and sprinkle with salt & pepper.
- Bake in a 325 degree oven for about 15 minutes.
- Stir and add capers, then pop back in for another 30 minutes, stirring once after 15.
- Remove from oven and serve warm
