Raw Oatmeal Raisin Cookies

~2 cups dry oats
3 ripe bananas
1 cup raisins
1 cup raw cashews, soaked in water overnight
2 tablespoons cinnamon
1 tablespoon lemon juice
Drain cashews and puree in food processor. Smash bananas in a mixing bowl and add oats, raisins, cashew paste, cinnamon and lemon juice. Spoon balls onto dehydrator sheets and set to about 115 degrees for 6 – 8 hours, depending on how crispy you like. If you don’t have a dehydrator, you can bake on cookie sheets in the oven.
