Raw Coconut-Carrot Macaroons

Another raw recipe coming at you! I love playing around with combinations of healthful raw ingredients and creating a satisfying sweet(ish) treat. These coconut carrot macaroons allow you to get some veggies into your diet without even realizing it.

Makes 24

 

Ingredients

  • 4 large carrots, peeled chopped
  • 1 cup shredded coconut
  • 1 cup raw almonds, soaked overnight and drained
  • 6 large dates, pitted and soaked in warm water for about 30 minutes
  • 2 – 4 tablespoons coconut oil

Preparation

  1. Throw all ingredients in the food processor and puree for about a minute, until carrots are fully shredded and distributed evenly.
  2. Scoop and roll into 1 inch balls.
  3. Place on dehydrator sheets and set to 115 degrees for about 8 hours. (if you like them more chewy, you may choose to take out after 6 hours or so)
