Paleo Burgers


Burgers! So satisfying, I consider them a comfort food. In this simple variation, they become Paleo and can take on all kinds of condiments.

Serves 4 – 6

 

Ingredients

  • 2 lbs ground organic grass-fed beef
  • 1 diced medium red onion
  • 4 cloves garlic, crushed
  • 2 organic eggs
  • 1/4 cup flax meal
  • 2 tablespoons minced fresh oregano or parsley
  • salt & pepper to taste
  • 2 tbsp coconut oil (refined or unrefined)
  • 1 head of red or green leaf lettuce
  • 1 thinly sliced avocado
  • 2 thinly sliced tomatoes
  • 1 thinly sliced red onion
  • mayo, mustard & ketchup to taste


Preparation

  1. Combine meat, onion, garlic, eggs, flax meal, herbs and salt & pepper and knead together until well mixed.
  2. Scoop about 1/2 cup of the mixture at a time and form 8 – 10 patties.
  3. In a skillet melt coconut oil.
  4. When hot, lay patties in and cook for about 5 minutes before flipping and cook for another 5 minutes on the other side.
  5. Remove and serve patties sandwiched between lettuce leaves.
  6. Add avocado, tomato, onion and condiments to taste.

Mashed yams or sweet potatoes make for a complimentary side dish. Now roll your sleeves up and enjoy!
