Paleo Burgers

Burgers! So satisfying, I consider them a comfort food. In this simple variation, they become Paleo and can take on all kinds of condiments.
Serves 4 – 6
Ingredients
- 2 lbs ground organic grass-fed beef
- 1 diced medium red onion
- 4 cloves garlic, crushed
- 2 organic eggs
- 1/4 cup flax meal
- 2 tablespoons minced fresh oregano or parsley
- salt & pepper to taste
- 2 tbsp coconut oil (refined or unrefined)
- 1 head of red or green leaf lettuce
- 1 thinly sliced avocado
- 2 thinly sliced tomatoes
- 1 thinly sliced red onion
- mayo, mustard & ketchup to taste
Preparation
- Combine meat, onion, garlic, eggs, flax meal, herbs and salt & pepper and knead together until well mixed.
- Scoop about 1/2 cup of the mixture at a time and form 8 – 10 patties.
- In a skillet melt coconut oil.
- When hot, lay patties in and cook for about 5 minutes before flipping and cook for another 5 minutes on the other side.
- Remove and serve patties sandwiched between lettuce leaves.
- Add avocado, tomato, onion and condiments to taste.
Mashed yams or sweet potatoes make for a complimentary side dish. Now roll your sleeves up and enjoy!
