Mediterranean Roast Chicken Salad


Next time you roast a chicken for dinner, why not make a second and turn it into a scrumptious salad for your lunches or a picnic dish?

Serves 6

 

Ingredients

  • 1 roasted chicken, meat pulled off
  • 1 cup cherry tomatoes, cut in half
  • 1 cup crisp green olives, pits removed and sliced (I like the Cerignola variety)
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • salt & pepper


Preparation

  1. Pull all of the meat off the chicken and place in a large mixing bowl.
  2. Add tomatoes and olives and toss, then add feta and toss again lightly.
  3. Drizzle with olive oil and sprinkle with salt & pepper.
