Kale Salad with Caramelized Onion, Goat Cheese & Avocado


Raw kale makes for a robust salad that can accommodate all kinds of tasty ingredient combinations. In this version, I’ve used caramelized onion, goat cheese, almond slivers and avocado, but you could also play around with adding pear and/or cranberries, depending on how central you want this dish to be.

Serves 4

 

Ingredients

  • 1 bunch green kale, stems removed and torn into medium pieces
  • 1 large red onion, sliced into thin rounds
  • 1 avocado, cubed
  • ~2 oz goat cheese, crumbled
  • 4 tablespoons slivered almonds
  • 2 lemons, juiced
  • 1 tablespoon fresh tarragon, chopped
  • 1 tablespoon whole grain mustard
  • 1 teaspoon granulated garlic
  • 1/4 cup olive oil
  • salt & pepper


Preparation

  1. In the bottom of a large salad bowl, combine olive oil, mustard, granulated garlic and salt & pepper.
  2. Blend well.
  3. Add lemon juice and continue stirring.
  4. Add kale to the bowl and start tossing, making sure all leaves are covered in dressing.
  5. Arrange avocado, goat cheese and almonds on top and serve.
