Grilled Radicchio

You may be familiar with bitter raw radicchio in salads, however cooking it tends to bring out a nuttier flavor. You can certainly use an outdoor grill, however if it’s not convenient, cooking in a skillet works great too.
Serves 4
Ingredients
- 2 heads radicchio, quartered
- 3 tablespoons olive oil
- 1 tablespoon coconut oil
- salt & pepper
Preparation
- Arrange radicchio quarters on a plate, with center core facing up.
- Drizzle with olive oil and sprinkle with salt & pepper.
- Heat skillet and add coconut oil.
- Lay radicchio into the skillet, flat on one of the cut sides.
- Sear for about 4 minutes, until browned, then turn over and repeat on the other cut side.
- Goes well with a meat main or even fried eggs.
