Grilled Radicchio


You may be familiar with bitter raw radicchio in salads, however cooking it tends to bring out a nuttier flavor. You can certainly use an outdoor grill, however if it’s not convenient, cooking in a skillet works great too.

Serves 4
 

 

Ingredients

  • 2 heads radicchio, quartered
  • 3 tablespoons olive oil
  • 1 tablespoon coconut oil
  • salt & pepper


Preparation

  1. Arrange radicchio quarters on a plate, with center core facing up.
  2. Drizzle with olive oil and sprinkle with salt & pepper.
  3. Heat skillet and add coconut oil.
  4. Lay radicchio into the skillet, flat on one of the cut sides.
  5. Sear for about 4 minutes, until browned, then turn over and repeat on the other cut side.
  6. Goes well with a meat main or even fried eggs.
