Chipotle Slaw

Great for a BBQ, here’s a twist on classic slaw that has just the right amount of spice and creaminess. Give it a try; it’s especially delicious paired with ribs or a roast chicken.
Serves 6
Ingredients
- 1/2 head red cabbage, shredded
- 1/2 head green cabbage, shredded
- zest of 4 Meyer lemons
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon molasses (not blackstrap)
- 1 tablespoon red palm sugar
- 1 small can chipotle chiles, minced, plus 2 tablespoons remaining adobo sauce
- 4 green onions, sliced thinly
- 1/2 bunch fresh cilantro, coarsely chopped
- salt & pepper
Preparation
- In a medium measuring cup, mix together the dressing ingredients: mayonnaise, sour cream, apple cider vinegar, molasses, sugar, chile, adobo and salt & pepper.
- Stir well and drizzle over the shredded cabbage, then toss.
- Before serving, add in the green onion and cilantro.
