Chipotle Slaw


Great for a BBQ, here’s a twist on classic slaw that has just the right amount of spice and creaminess. Give it a try; it’s especially delicious paired with ribs or a roast chicken.

Serves 6

 


Ingredients

  • 1/2 head red cabbage, shredded
  • 1/2 head green cabbage, shredded
  • zest of 4 Meyer lemons
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon molasses (not blackstrap)
  • 1 tablespoon red palm sugar
  • 1 small can chipotle chiles, minced, plus 2 tablespoons remaining adobo sauce
  • 4 green onions, sliced thinly
  • 1/2 bunch fresh cilantro, coarsely chopped
  • salt & pepper


Preparation

  1. In a medium measuring cup, mix together the dressing ingredients: mayonnaise, sour cream, apple cider vinegar, molasses, sugar, chile, adobo and salt & pepper.
  2. Stir well and drizzle over the shredded cabbage, then toss.
  3. Before serving, add in the green onion and cilantro.
