Chard Nest & Eggs

Ever ponder what to eat your eggs with besides toast? Sauteed veggies can make the perfect accompaniment and also align with many dietary guidelines. I find rainbow chard makes for a satisfying and healthy nest with which to lay your eggs on. Fortunately, my parents grow towering greens like this almost all year-round. I use a pan with 4 little cups that float above the boiling water below, which essentially serves as a coddler for the eggs, however you can certainly poach them and get the same breakfast effect.

Ingredients
- 1 large bunch rainbow chard, washed and sliced in 2 inch strips, including stems
- 1 yellow onion, chopped
- 4 eggs
- 2 tablespoons olive oil
- 2 pats of butter
- salt & pepper
Preparation
- Heat olive oil in a saute pan and add onions.
- Stir occasionally until slightly browned.
- Add chard and salt & pepper.
- Continue cooking on medium heat for about 5 minutes, until wilted.
- Bring water to a mild boil in coddling pan and melt butter in dishes.
- Break eggs and cover.
- Cook about 5 minutes for runny yolks.
