Cabbage Tomato Salad


Another quick veggie fix: this time with red cabbage and cherry tomatoes, plus a couple extra flavorful ingredients. Crisp with both sweet and salty. Makes for an excellent easy side that pairs especially well with poultry.

Serves 4
 

 

Ingredients

  • 1/2 head red cabbage, shredded
  • 2 cups cherry tomatoes, halved
  • 4 oz whole milk mozzarella, cubed
  • 4 tablespoons olive oil
  • 1/4 cup pine nuts, toasted lightly
  • salt & pepper


Preparation

  1. With cabbage in a large salad bowl, drizzle with olive oil and sprinkle with salt & pepper.
  2. Toss well, then add tomatoes and mozzarella and toss again.
  3. Sprinkle pine nuts over the top and serve.
