Brussel Sprout Salad w/ Pecans & Lemon Zest

Brussel sprouts may not be your favorite vegetable. I enjoy their earthy flavor, but even if you don’t, with these accompaniments, you’ll be surprised how much it’s transformed. Here’s to more tasty ways to get your greens!
Serves 4
Ingredients
- 2 pounds brussel sprouts, trimmed and blanched
- 1 cup raw pecans, coarsely chopped
- zest of 4 Meyer lemons
- 1/4 cup olive oil
- salt & pepper
Preparation
- Cut each brussel sprout in half, them slice in thin sections, from top to core.
- Throw into a salad bowl and drizzle with olive oil and sprinkle with salt & pepper.
- Zest lemons into the bowl and toss salad thoroughly.
- Add pecans and toss again.
