Arugula Corn Salad


Love bitter greens? Combine with sweet summer corn for a fresh side that pairs well with BBQ.

Serves 4
 

 

Ingredients

  • ~1 lb arugula
  • 2 ears sweet corn, husked and sliced from cob
  • 1/2 red onion, sliced into very thin rounds
  • 4 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 2 tablespoons champagne vinegar
  • 1 teaspoon garlic powder
  • salt & pepper


Preparation

  1. Combine olive oil, mustard, garlic powder and salt & pepper in a salad bowl and mix well.
  2. Add vinegar and continue mixing until emulsified.
  3. Toss arugula in dressing, then add corn and onions and lightly toss again before serving.
