MARION NESTLE IN THIS MONTH’S SF CHRONICLE

Wednesday, September 15th, 2010

Bk5

Marion Nestle is an international expert in nutrition, food science, and public health. She was asked what doctors should be telling their patients about how to care for their families from a nutritional perspective. Her answer was relatively simple and had three parts:

1. SEEK VARIETY – different foods have different nutrients.

2. SEEK UNPROCESSED FOODS – the foods you eat should be as close as possible to how they came from the plant or animal. Processing often involves the addition of sugars, salts, and fats with the possible removal or degradation of fiber and nutrients.

3. SEEK MODERATION – this goes for moderation in the treats and sweet that you eat (which are included in your diet under point #1) and in moderation between consumption and physical activity. Avoid excess.

Sounds good to me.
Cheers,

Tonight I am in DC and I just had dinner at Zaytinya, a restaurant of one of my favorite chefs, the James Beard Award winner Jose Andres. If you have ever seen his PBS show, Made in Spain (episodes available on Hulu by the way), you know how much passion this man has for food. He and his food are incredible.

If you follow this link, you will find a 5 minute video in which Jose (with his daughters) talks with Sam Kass (the White House chef) about making simple, healthy, and economical meals. What I love about this video is that this famous chef is telling folks how to save money by showing them how to buy and prepare a whole chicken and whole vegetables. He shows how essentially the same ingredients can be used for a week’s worth of meals and he shows how you can save time and increase flavor and satisfaction by roasting vegetables whole and preparing dishes that add fresh veggies and protein to your diet.

I love world class chefs who are down to earth. To me, being a foodie means loving food. And in my opinion, there are few people who love and understand food better than Jose Andres.

Cheers,
Larry
